So you can either make a flat "roof" in basically the same way you make floors, our you can make an angled roof by basically making a ramp on top of your building. Either way, filling in the roof is easier if you make a way to climb up on top of your building. #1.

I'm not able to dismantle fires or my log storage. Just pressing "C" like when you are taking apart a cabin does not work. The only way I'm able to remove these things is by turning building damage on in the settings and breaking them with my axe.
